Ingredients:
(Note: We will be using from the 'Net with food idea cos. from Knorr(R) of Scandinavia and Glicko(R) of Japan for any of their popular soup bases and concentrates which have to be kitchen tested or formulated.)
- Chicken broth and from bullion, 4 c with 2 cubed bullion
- Chicken and Beef, 2 1/2 lbs med. cubed to bite size pieces
- Tomatoes (sun-dried), from 3 tomatoes
- Green & red bell peppers roasted, peeled and sun-dried, 1 of each and sliced to slithers
- Turmeric extract (note, we substitute saffron for this yellowing ingredient), 3 tblsp
- Whole raisins, 1/3 c
- Whole pimiento olives, 1 doz sliced to garnish topping
- Potatoes, 3 med. cubed
- Onions, 1 med. minced
- Garlic, 3 cloves minced
- Chorizo, 1/2 lb med. cubed to bite size pieces
- Salt & pepper, to taste using 2 tsp of each one
- Olive oil, 5 tblsp
- Paprika, 2 tblsp
- Bay Leaf, 2 pieces
- Hard boiled eggs, 5 sliced in medallions
- Rice, short-med. grain, 3 c (serves 8)
- Scallions, 1/2 doz. cut to stalks of 3 in. and fluted at end to decorate for greens on the top
- Add store-bought seafood mix, 125 g bag
- (Optional) Mussels, Scallops, Shrimp, Clams (all-in-shell), and/or Squid fried with its white meat enough to garnish the topping or 5 of each x 5 for total 25 pieces.
Instructional Steps:
Pre-cook by browning the meat cubes in the onions for 10 mins.
Take oil and fry garlic, turmeric, paprika, salt and pepper.
Take the stock and bullion that has dissolved in it and add rice, add the other veggies of tomatoes, peppers, raisins, potatoes, and chorizo, bay leaf, and seafood mix and cook or boil for 20 mins.
Add in finally the browned meat cubes.
Cook to boiling point for 20 mins.
Remove from heat and stand and place in an oval casserole dish and proceed to decorate with toppings with the egg medallions, scallions and shelled seafood and the squid- if any prepared by golden browning in a mini-roaster.
Finally top with olives sliced.
Remember there is potato, raisin, seafood mix ingredients, tomatoes and peppers, chorizo, and of course the meat cubes making the dish both so tasty and entertaining.
