Ingredients:
1/2 c sweet potatoes (mashed, cooked)
1/2 c cooked cassava (from packet at you cnr Filipino store)
1/2 c cooked dessert yam (e. g. white Ube) (from packet at you cnr Filipino store)
6 eggs
1/2 c brown sugar
1 c dessert cheese
1 c cream for milk
1 c Daisy or fluffed dessert cream (not whipped cream)
2 tblsp vanilla
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp allspice
2 tblsp margarine
12 mini tart pie shells
Instructions:
1) Cube and deposit in a medium sauce pan in boiling H2O for 5 mins.
2) Drain, set to cool and mash with a fork and mix together thoroughly.
3) Mix rest of the ingredients in a food processor until pastey smooth or pureed.
4) Fill each pie shell with yam puree.
5) Cover with wax paper after sinking into a watered flat baking pan.
6) Cook in the preheated 220 deg C for 35 mins.
7) Cool and store in an airtight container in the cooler ( 5 deg C).
