Ingredients:
9 tblsp. sugar
12 egg yolks
1 can sweetened condensed milk
1 can evaporated milk
2 tblsp cinnamon
2 tblsp vanilla
1 tblsp cloves
1 tsp allspice
1 tsp mace
1 1/2 tblsp. nutmeg
1 tblsp almond extract
Instructions:
caramelize by melting at bottom of pan molds with heating over flame and swirling mometarily making sure not to burn the caramel.
blend in condensed milk, evaporated milk, egg yolks and strain after mixing through cheese cloth into a cup dispenser.
add in the spices and other flavourings into and blend thoroughly.
fill into the caramelized molds on top.
cover with aluminum foil.
put in glass bottomed tray and immerse half-way up with H2O.
bake on med. to hi heat for 45 mins making sure the water boils but does not dry up.
uncover the molds, release the flan bottom side up onto a serving plate and refrigerate for another 2 hrs. before serving.
