Bangus (milk fish) Relleno in Puff Pastry.

Filling:
-take 4 large - medium milk fish (Bangus as it is called colloquially) and add to food processor for mixing and all the rest of the ingredients in the end.
-3 leeks, chopped finely
-1 large onion
-1 c. sour cream
-1 tblsp butter
-1 raw egg
-1 tsp salt
-1 c. milk
-3/4 c. all-purpose flour
-1/3 c. Asiago cheese
-1/3 tblsp paprika
-1 pouch Knorr (R) chicken soup base
Filling the Puff Pastry and Baking them:
-Take 2 doz. empty pie shells (pre-made) and take out the cored top and thaw at room temperature.
-Then fill the casings to full and replace the top on the puff pastry.
Baking instructions:
-Take the pastry shell on top and baste with milk, to golden brown, evenly after baking.
-Then in a greased or wax papered cookie sheet arrange them per dozen and bake at 175 deg C for 25-30 mins or shorter until done.
