"Crab a la Mode Salad Sandwiches and as a Mac-n-Cheese Dish Gives Off Great Richness..."

Instructions:


Bechamel Sauce with Mayonnaise:

In a double boiler affair with water bath sitting underneath add in

5 tblsp butter

1 quart cream

1 tsp salt

3 egg yolks

And whisk briskly continuously until slightly boiling and thickened (20 mins.).

Mix in 1 quart mayonnaise by folding in thoroughly.


Chilli Crab Mix:

1/2 c sweet chilli sauce

1 1/2 tomato puree

2 tbsp ketchup

3 long chillies

3 shallots

3 tins of either Crab meat or Aquamar surimi(R) (avail. from Safeway)

Mix in a 2 quart saucepan over MED heat the prepared ingredients and also the meat product(s).


Concombre into Cubes:

1 1/2 BC Grown cucumbers


Sandwich Making Instructions:

Mix all ingredients into a large steel mixing bowl and set out slices of herbed Italian bread and fashion

the sandwiches by liberally spreading filling on one face and then closing it the second face and so on until

12-15 medium sandwiches are complete and serves 6-8 people.



Macaroni-n-Cheese Casserole:

Instructions:

Make the Bechamel sauce as instructed above, and add cinnamon and nutmeg (3 tsps. of each),

mild cheddar cheese (3-4 c) and 1/2 c margarine and fold into 3.5 qt casserole with the al dente and previously boiled macaroni pasta of about 3 c of raw pasta done in a large boiling pot with salt added to taste.

Bake at 175 deg C for 45 mins until crust on top is golden then leave on a wire base stand to cool

for 20 mins and serve by scooping out onto a 6-8 dish bowls.



Serving Suggestions:

Have this all for a hearty lunch of pasta and salad sandwiches for lunch or the sandwiches tea in the afternoon.

COOKING TIPS BY THE TIME DINNER COMES ROUND WITH FAMILY AND FRIENDS:

Keep it simple. Note and go through each step of the cooking process from prep time (including arranging ingredients), utensils, including pots and pans, preheat the oven and set timer for cooking time, after let set aside to cool down according to instructions; serve also in the manner for presentation as recommended by the recipe-maker.

Check for doneness with cooking time: e. g. for roasts, use a roasting thermometer, a toothpick for breads, puddings and cakes; note the need to pre-coat the sheet pans for baking with shortening/oil. For pasta and vegetables follow carefully instructions to be al dente adding enough water, gentle boiling with salt added and tasting regularly the bite, followed by draining and washing several times.

As a rule we prepare and present foods readily using only the implements and serving dishes and/or pans that allow for this to avoid any extra artistry thru decorative needs as is limited, involved with the dish. Alternatively follow according to script the illustrated suggestion on the packaging.
