"Custard Apple (the Pinoy "Atis" Fruit) Flan Pudding is Quite Good for Savouring the Flavour."

Ingredients:
-2 custard apples ("Atis")
-9 tblsp. sugar
-12 egg yolks
-1 can sweetened condensed milk
-1 can evaporated milk
-3 tsp vanilla extract
Instructions:
deseed the fruit completely and pulp in a collander to prepare fruit pulp.
caramelize by melting sugar at bottom of pan molds with heating over flame and swirling mometarily making sure not to burn the caramel.
add in the fruit pulp first.
blend in condensed milk, evaporated milk, egg yolks and strain after mixing through cheese cloth into a cup dispenser.
add in the flavourings and blend thoroughly.
fill into the caramelized molds on top.
cover with aluminum foil.
put in glass bottomed tray and immerse half-way up with H2O.
bake on med. to hi heat for 45 mins making sure the water boils but does not dry up.
uncover the molds, release the flan bottom side up onto a serving plate and refrigerate at 5 deg C for another 2 hrs. before serving.
