Cooking Equipment: Round silicone Cutsinta molds

Round steamer


Ingredients:

Coconut shavings, fine (dessicated) as cake topping

1 tblsp lye H2O

1/2 c Gabi or Taro or Ube (purple) flour from root crop tuber

3 c H2O or 3 c rose water

1 1/2 c rice flour

1 1/2 c white sugar

3 tblsp canola oil

2 tblsp vanilla or 1 tblsp cinnamon/1tblsp allspice


Instructions:

To prepare the cake batter take the H2O or rose water and add in the dry ingredients with the spices or condiments and oil and fill each well of the silicone mold tray 3/4 high and load in layers into the steamer

and steam covered for 40-45 mins.


To serve excise each cake from its well mold and stack in layers on a doile spread preferably with an underside of banana leaf cut to a circle, pre-washed and lightly oiled. Take care to amply top with white coconut each cake beforehand.

As a rule we prepare and present foods readily using only the implements and serving dishes and/or pans that allow for this to avoid any extra artistry thru decorative needs as is limited, involved with the dish. Alternatively follow according to script the illustrated suggestion on the packaging.
