"Fill It as a Comfort Casserole by Doing It in a Deep Skillet... that is Oriental Pot Pie for You!"

Oriental Pot Pie Comfort Food.

- An experiment in the blessed combination of unmistakable umami flavour and garlic for a savoury Oriental dish.

Preheat the oven at 175 deg C and bake the pot pie for 40-50 mins.

(1) Filling: start with 1lb chicken cubed (white and dark), 500g potato cubed, cooking oil (canola), 3/4 c. chopped celery, 1/2 tsp sesame seed oil, 1/2 c. soy sauce, 6 cloves chopped garlic (no onion), 2 tblsp chilli extract or spice, for the roux to thicken filling use 1/2 c. chicken consomme or broth 2 tblsp cornstarch + 1/4 c. butter and 1 1/2 c. consomme in a measuring glass container, 1 1/2 c. sliced button mushrooms, 1/4 c. fish sauce diluted 1:1 in H2O, 1 1/4 c. seafood paste (shrimp, crab, and/or lobster)**.


**Take tinned shrimp flesh, crab meat and/or lobster meat, 1:1:1, and grind together in a food processor.

(2) Take Puff Pastry for the Top Crust and add 3/4 c. Shredded Cheese On Top (Monterrey Jack) arranged inside 2 cast iron skillets.

(3) Side Dishes: E. g. s. Creamy Cucumber Salad from your favourite grocers like Safeway(R) or Save-on-Foods(R) and also high tea Sandwiches, Pickled Acharra [gherkins, greener papaya fruit, carrots, green peppers ( or sweet chillies)] from your favourite Filipino corner store.

COOKING TIPS BY THE TIME DINNER COMES ROUND WITH FAMILY AND FRIENDS:

Keep it simple. Note and go through each step of the cooking process from prep time (including arranging ingredients), utensils, including pots and pans, preheat the oven and set timer for cooking time, after let set aside to cool down according to instructions; serve also in the manner for presentation as recommended by the recipe-maker.

Check for doneness with cooking time: e. g. for roasts, use a roasting thermometer, a toothpick for breads, puddings and cakes; note the need to pre-coat the sheet pans for baking with shortening/oil. For pasta and vegetables follow carefully instructions to be al dente adding enough water, gentle boiling with salt added and tasting regularly the bite, followed by draining and washing several times.

As a rule we prepare and present foods readily using only the implements and serving dishes and/or pans that allow for this to avoid any extra artistry thru decorative needs as is limited, involved with the dish. Alternatively follow according to script the illustrated suggestion on the packaging.
