Ingredients to Split Pea and Smoked Ham Bean Bake:
2 c smoked ham or smoked turkey, chopped
2 1/2 c yellow split peas
2 1/2 c yellow squash (or calabasa)
2 c sweet yellow corn, canned
1/2 large yellow onion, chopped
2 tsp rosemary
2 tsp sage
1 bay leaf
3 c Monterrey Jack cheese or mild cheddar cheese
2 1/2 tblsp salt
2 c H2O for peas
2 c H2O for squash
2 tsp black pepper
Instructions:
1. Boil water for peas and squash, add the onions, condiments and boil until soft covered with lid to simmer.
2. Take a rounded casserole (large size) and fill the container with cooked, squash, corn and the grated cheese.
3. And bake 40 mins at 175 deg C, covered.
Serving suggestion:
Take a recipe for corn bread and cut to servings, buttered and herbed with parsley. Serve hot with a wide bowl or dish and trim with slices of corn bread on the side.
Take a Chefs Salad to "beef up" the meal with ham and boiled eggs and cream of Caesar salad dressing.
