Ingredients:
4 c. coconut milk
4 c. fresh milk
1 c. sweet kernel corn
1 c. cream cheese
7 tblsp white sugar
1 c. corn starch diluted in 3/4 c. H2O
Instructions:
1. Set aside a large ring mold of a pan (avoid a square pan for better presentation).
2. For liquids mix of coconut milk, fresh milk, corn starch diluted in H2O bring to gentle boil.
until thickened.
3. Pour into the mould, cool down and then chill overnight.
Serving:
1. Flip the ring mold and slice liberally (1 1/2-2'' thickness) and place in individual serving saucers and trim with
slivers of young coconut drained from syrup tinged lightly with vanilla spice.
2. Optional: to decorate for X'mas with festive faire try cake decorative gummies for extra decoration and for
birthday celebrations.
