Vegan Sicilian Pizza Crust:
Ingredients:
1 c H2O (warm)
1/4 oz active yeast
2 tblsp shortening
1 1/2 tsp salt
1 tsp white sugar
1 tsp Ramen flavour powder from packet
3 c all-purpose flour
Instructions:
Mix with warm H2O with bakers yeast and wait for it to bubble, then mix together 3 c all-purpose flour, 1 tsp sugar, 1 1/2 tsp salt, and 2 tblsp shortening and mix thoroughly in a stainless steel bowl and then on a lightly floured counter top, knead the ball several times (flatten the dough by punching, take a side and fold a whallop by picking it up and continue into the dough from the top and again knead by flattening) and set in a mound shaping it as such by its undersides and place back in the bowl to rise for 1 hr under a cover of moist cheesecloth and then repeat the procedure 2X.
Spread onto 3 pie trays or plates thinly (1/2") and set aside at room temperature.
Topping:
Ingredients:
4 c ricotta cheese
3 packets of beef-chicken Ramen instant noodle powder
2 tblsp butter (melted)
2 tblsp all-purpose flour
1 c milk
3/4 red onion (cut into scalloped shaped strips)
2 c spinach leaves (baby if possible)
2 c endives (chopped 1/2" thick)
Instructions:
- To make the roux, take and melt butter, dissolve flour and add in milk and stir vigorously until it browns and thickens on the cast iron pan. Take aside.
- Add into a bowl with the ricotta cheese and dissolve by mixing thoroughly the 2 of the 3 instant noodle packet's contents and set aside.
- Take the charged pie plates and sprinkle evenly the remaining 1 packet's contents lightly onto the 3 doughed pie shells.
- Spread the topping evenly onto the pie shells and top further with spinach, onions and endive evenly.
Cooking instructions:
- Bake all 3 pizzas for 25-30 mins or until crusty and brown at 175 deg C.
Serving Suggestions:
- Slice 6 to a pie and serve with the suggested drink of: White Grape Squash*.
White Grape Squash Recipe*:
3 large ginger fingers
1/2 c lemon juice
500 ml white apple juice
500 ml white grape juice (E. g. Welch's grape juice)
Dessert Roll Swirls or Strudel:
Ingredients and Instructions:
- Pillsbury(R) Roll Dough and roll out to a rectangle on the wooden counter top.
- Filling is prepared by 2-3 c of strawberry compote (prepared), 2 c of white raw sugar, 2 tsp cinnamon, 2 tsp vanilla.
- Along the pastry dough layer the compote for filling and roll into and along its length and form a round or circle
sealing the ends together and finish by scoring the round cross-wise 2-3 inches apart and glaze to golden brown with whole egg wash.
- Bake for 45-55 mins at 175 deg C and then keep at room temperature and slice into pieces before serving.
