Southern Comfort in Chicken-Rice Americana

Ingredients:
2/3 c. minced chicken (pre-baked)
1/4 c. walnuts, fine-chopped (optional)
1/4 c. parsley, fine-chopped
4-6 c. converted rice (e. g. Uncle Ben's (R)) boiled cooked in chicken consomme
1/2 c. corn, from kernel off the cob
1/2 c. broccoli spears, diced
1/2 c. sweet potato, diced
1 minced white Spanish onion
5 tsp. ginger
2 tsp. rosemary
2 pcs. bayleaf
1/4 c. olive oil
1/2 c. jus d'orange
1/2 c. parsley
dash of salt & pepper to taste
Procedure:
Pre-boil rice in chicken consomme to cover with bay leaf.
Add oil to pan to fry.
Sautee onion, ginger, rosemary and chicken cubes.
Sautee veggies of corn, broccoli, sweet potatoes and mix well.
Add in the pan the cooked rice and orange juice and refry with salt & pepper to taste
Mix well and serve with added optional crushed parsley and walnuts for best presentation.
