The Crossed Trellis Coffee Cake that Mum Used to Make for Our Hometown Cafe...

Trellised Coffee Cake:

(Note the description refers to the crissed-cross pattern of pastry topping in 1/2" wide repeats across the coffee cake with in between 1" windows.)


Pie Filling: pineapple (lime juice to avoid browning), banana paste (lime juice to avoid browning), apple paste (lime juice to avoid browning), pineapple juice, cinnamon and brown sugar for liquids in the filling or mix.

Pie Shell: white muffin dough mix (base, edges, crissed-cross trellised top on cover).

Glaze: egg white and milk.

Peanuts sprinkled bits.


Instructions: Take the savoury fruit mix for filling and spread with a rubber scraper into the pie shell sans trellised top or cover; also line the rectangular pie plate or pan with 1/8" dough thickness at the base and shore up the edges as well; cut the trellises to 1/2" wide repeats to their desired length and cut ad fuse at the edges; bake at 175 deg C for 45-55 minutes glazing intermittently until cooked and appearing golden brown. Cut into squares and serve with your favourite cup of coffee.

COOKING TIPS BY THE TIME DINNER COMES ROUND WITH FAMILY AND FRIENDS:

Keep it simple. Note and go through each step of the cooking process from prep time (including arranging ingredients), utensils, including pots and pans, preheat the oven and set timer for cooking time, after let set aside to cool down according to instructions; serve also in the manner for presentation as recommended by the recipe-maker.

Check for doneness with cooking time: e. g. for roasts, use a roasting thermometer, a toothpick for breads, puddings and cakes; note the need to pre-coat the sheet pans for baking with shortening/oil. For pasta and vegetables follow carefully instructions to be al dente adding enough water, gentle boiling with salt added and tasting regularly the bite, followed by draining and washing several times.

As a rule we prepare and present foods readily using only the implements and serving dishes and/or pans that allow for this to avoid any extra artistry thru decorative needs as is limited, involved with the dish. Alternatively follow according to script the illustrated suggestion on the packaging.
