The Dessert Makes Me Care About Cookies That Are Hip To Be Square... !"

White Mint Chocolate Chip Oat Square Cookies:


Dry and Wet Ingredients: (makes 2 doz. cookies)

3 tblsp -Milk Powder

3/4 c -Italian White Dessert Cheese Powder** (if available) or 1 3/4 c Ricotta Cheese (as is)

1/2 c -Rye flour

3/4 c -Oat flour

1/2 c -White sugar (refined)

1 tsp -Baking powder

1 tsp -Vanilla extract or artificial

1/2 c -Milk

2 tblsp -Canola oil


**theoretical cheese powder is made as a powder with a non-clumping agent of CaCl2 that is food-grade and stored with an anti-oxidant like citric acid as a bulk, low-cost protein supplement also useful for humanitarian aid projects



Instructions:

Take a hand mixer with its mixing bowl and put in the dry ingredients and then liquids and mix for 15 mins until the batter is well done or homogeneous.

Take a flat aluminium pan and spread the batter around after oiling the surface 1/2" thick and rough sprinkle the bits or chips of green chocolate and press into the cookie pan and score with a knife edge 3 1/2" X 3 1/2" squares for the cookies

Slide into a 165 deg C oven for 20 mins. and then promptly remove to cool to counter top. Take a flat spatula (e. g. hamburger flipper) and loosen the base until square cookies are obtained separately, gingerly coaxing them off the cookie pan.


Packaging or Presentation Box Suggestion:

Obtain a festive or Christmas-like tin decorated with festive evergreen bows and ribbons, for e. g., and lined with crepe paper and to wrap or cover the cookies in the tin and seal tin for gift giving.



Shards of specially made Mint (green) or Red (food colour) White Chocolate: St. Patricks, Valentines, Easter Day or for end-year Festive Cheer!

Preparation: in a double-boiler melt white chocolate of about 500 g from candy and add in 4 tsp mint extract of oil until an even green colouring is achieved. Pour onto a flat sheet pan to a thickness of 1 1/2 cm and put into 5 deg C fridge until set, then remove from fridge and proceed to slice up into shards or medium size chips to decorate the cookies.

COOKING TIPS BY THE TIME DINNER COMES ROUND WITH FAMILY AND FRIENDS:

Keep it simple. Note and go through each step of the cooking process from prep time (including arranging ingredients), utensils, including pots and pans, preheat the oven and set timer for cooking time, after let set aside to cool down according to instructions; serve also in the manner for presentation as recommended by the recipe-maker.

Check for doneness with cooking time: e. g. for roasts, use a roasting thermometer, a toothpick for breads, puddings and cakes; note the need to pre-coat the sheet pans for baking with shortening/oil. For pasta and vegetables follow carefully instructions to be al dente adding enough water, gentle boiling with salt added and tasting regularly the bite, followed by draining and washing several times.
