The Flaked Saltine Peanut Almond Butter Hors-d'Ouvre... Out Does the Coco Honey Spread with a Lot of Verve..."

The Major Feature Here is to Make the Marzipan-like Spread on Saltines or Flaked Crackers (try a box of Christie's here in Canada) as ff:


Ingredients:


  • 1/2 c Almond Flakes Food Processed to a Butter

  • 1/2 c Peanut Butter (store bought)

  • 3 tblsp Lemon Juice

  • 1/3 c Honey (pasteurized or spun)

  • 2 egg whites beaten to a stable meringue

  • 3 c Confectioner's Sugar

  • 1/2 tsp Vanilla



Instructions:


  • Beat the eggs whites to a stiff meringue and proceed to add both the wet and dry ingredients, preferably in a dough mixer [try a KitchenAid(R) heavy duty mixer with fittings] and proceed to produce by mixing a ball of marzipan-like spread from a soft dough consistency.


  • For a more informal setting or for a snack time munchie try Coco Honey (Philippine-made) or Marmalade from Blood Oranges (try the imported ones from Great Britain), Lemon, Orange and Pineapple.


  • Toast Melba is also an ingenious idea for this recipe or dish by spreading a thinly sliced toasted bread with margarine and then the Oleo marzipan and optionally slices of fruit like Kiwi and Strawberry for accent..
