Red Velvet Peanutty Cake:
-grated carrots
-nuts (peanuts and/or pecans, optional)
-honey
-treacle (e. g. corn syrup)
-lemon kiss (from rinde)
-red food colouring or dye
-cinnamon
-caramel
-eggs
-brown sugar
-milk
-cooking oil or lard
-baking powder
-salt (pinch)
Instructions: 1) Mix powdered ingredient and liquids for make the batter and then 2) in the veggies grated or chopped, the honey, treacle, and spice herb like lemon kiss, cinnamon, 3) and at the end, add caramel from making white refined sugar and caramelize lightly in a pan before pouring in to the mix.
Baking Instructions: 380 deg C. for 45 mins. or until a toothpick probed inserts cleanly and out. Check regularly. A form-fitting pan (spring form) can be used with margarine lined on the bottom of the pan and sides. Otherwise, use a regular rectangular pan lined with wax paper and lard.
