"The Seafood-Porc-n-Beans Chilli Bake is hot, hot enough and piquant for its taste to give you a shake... !"

Ingredients: Makes for 4 1/2 c of chilli sauce + meats + small navy beans

1 1/2 lbs shrimp

1 1/2 lbs ground porc, med. mince

18 tblsp citrus (Calamansi, Filipino)

40 red med. Jalapeno peppers

12 tsp cayenne pepper

2 c Banana ketchup, Filipino

1 can tomato paste

12 tblsp br. sugar

32 small cloves garlic

3 tsp salt

2 c small Navy beans, pre-soaked 2 hrs.

6 tblsp cooking oil



Cooking Instructions:

  1. Place oil in slow cooker pot and fry gently the garlic cloves gently over HI setting.

  2. Throw in the meat (shrimp + porc) to brown.

  3. Sautee chilli peppers, then add the spices and condiments.

  4. Add the liquid ingredients (lime citrus juice + banana ketchup + tomato paste)

  5. Add the pre-soaked (2 hrs. previous) into the slow cooker and simmer overnite over MED heat.

  6. The next day sample your results for the shrimp/porc-n-beans to be soft as butter for a total of

    6 1/2 chilli casserole to serve 4-5 people with buttered French crusty bread.

COOKING TIPS BY THE TIME DINNER COMES ROUND WITH FAMILY AND FRIENDS:

Keep it simple. Note and go through each step of the cooking process from prep time (including arranging ingredients), utensils, including pots and pans, preheat the oven and set timer for cooking time, after let set aside to cool down according to instructions; serve also in the manner for presentation as recommended by the recipe-maker.

Check for doneness with cooking time: e. g. for roasts, use a roasting thermometer, a toothpick for breads, puddings and cakes; note the need to pre-coat the sheet pans for baking with shortening/oil. For pasta and vegetables follow carefully instructions to be al dente adding enough water, gentle boiling with salt added and tasting regularly the bite, followed by draining and washing several times.
