Peanut Almandine Biscotti (X4)
1 1/4 c. white sugar
6 eggs
2 tsp vanilla extract
1/2 tsp salt
8 oz. almond
6 c. all-purpose flour
3/4 c. peanut butter
3/4 c. cocoa powder
2 tsp. baking soda
Peanut Butter Biscotti (X2)
1 c. powdered sugar
2/3 c. butter
3 c. all-purposes flour
1/2 c. peanut butter
1 tsp vanilla
3 eggs
1/4 tsp salt
Preparation:
- Using a food processor for making cookie or biscotti dough proceed by mixing dry and wet ingredients into a ball and proceed to form a biscotti-like flat "loaf" on a well-larded cookie sheet and bake at 280 deg C for 20 mins.
- Cool the cooked loaves and proceed to use a sharpened bread knife into 3/4" thick slices to shape the biscotti

- Proceed to lay the individual cookies and cook again at 280 deg C for 10 mins or until dry to a golden brown.
Serving suggestion:
-Serve either as a coffee accompaniment mocha, latte, espresso or cappuccino and tea preferably with cream and sugar added.
