Ingredients: makes 7 cups total or serves 4
1 1/2 c coconut cream
1 1/2 c dairy whole milk
2 c H2O
1/2 tsp salt
3/4 c coconut strings (from the packet, frozen then thawed)
1/2 c white granulated sugar
1/2 c rice flour
1 tsp vanilla
1 tsp nutmeg
1 red and 1 green marascchino cherry, halved
Cool Whip (R) for topping
Instructions:
Take the rice flour and add to the cream mixture in a large sauce pan, plus H2O, then the spices, then
boil at HI settings initially, then simmer over MED heat for 20-30 mins. until cooked. Cool at room
temperature and proceed to place with the young coconut in a food processor and pulse until
completely homogeneous or smooth.
Replace contents in a 4 tall sundae glasses and garnish on top with Cool Whip (R) with a red and green
marascchino cherry atop, halved into two pieces each.
