Layers to work on:
The pie crust from Pillsbury (R) dough maker.
The filling of fruit-flavoured custard of persimmon-orange with lemon in gelatin.
Or the filling of mango with lemon also in gelatin.
The top layer of meringue from beaten egg whites and sugar.
Ingredients:
1 1/2 c fruit pulp of persimmon or mango
1/2 c H2O + packet of gelatin powder
1/4 tsp tartar
1/2 c lemon juice and/or 1/2 c orange juice
3 eggs yolks
1/2 c white sugar
1 c evaporated milk
3 egg whites
1 c white sugar
Instructions: Beat the meringue using a mixer set on HI.
Line the plate with pastry dough and trim.
Work on the filling by mixing dry and wet ingredients including the molten previously dissolved gelatin and fill the pie then top with meringue.
Bake the pie at 175 deg C for 55-60 mins.
