Yum-yum Fruity Mini-Pockets Never Cease to Please

Filling:
3/4 c. fresh fruit chopped or mashed + 1 c. preserve
1/2 c. all-purpose flour
Pastry:
2 dozen squares (2 1/2" X 2 1/2") pie pastry from the Pillsbury(R) Dough Boy
1 egg beaten (glue)
1 deep fryer with oil
powdered sugar
1 small fork to score or rib the edges of the folded rectangular pastry shell
mint to garnish
Instructions:
Take the ff. 4 fruity fillings:
banana mash + lemon zest + lemon juice for acidity
canned pineapple crushed + pineapple preserve
jackfruit preserve from a Filipino store
mango freshly chopped + mango preserve
Mix with all-purpose flour.
Scoop enough fruit filling onto the pastry shell and carefully fold over the other half and add an egg for glue,
score the pastry shell shut into a bite size rectangular shapes.
Heat up the deep fryer on setting and dip by frying for 5 mins. or until golden brown.
